Cheesy Baked Tomatoes Recipe

A delicious and healthy side dish recipe, these cheesy baked tomatoes go well with just about anything. Take advantage of those fresh summer tomatoes before they are gone and try this fresh and flavorful low calorie side for just 1 Points + each!

Ingredients

  • 4 tomatoes, halved
  • 1/4 cup freshly grated Parmesan cheese
  • 1 oz reduced fat provolone cheese, shredded
  • 1 tsp chopped fresh basil
  • 1 tsp chopped fresh oregano
  • 1/2 tsp salt
  • Freshly ground pepper, to taste

Instructions

  1. Preheat oven to 450° F.
  2. Place tomatoes cut-side up on a baking sheet.
  3. Top with Parmesan, provolone, oregano, basil, salt and pepper.
  4. Mist lightly with non-fat cooking spray and bake until the tomatoes are tender, about 15 minutes.

“Great overnight stay”

We read that the doubletree showed movies out by the pool on Fridays, so we decided to make an “in-town” night of it. I had Hilton points to spend, so all it cost us was the valet parking.

The rooms are spacious, very comfortable beds, two sinks. We had a tiny balcony overlooking the pool. In fact, I had requested a room with a view of the movie screen, and we got it! We watched the film, Rat Race, without leaving our room: perfect view, sound was just right. What great service!

In the evening, after dinner in Japan town, and the movie, we popped into Club Max, their on-site nightclub (no cover before 10 pm). They had a surprisingly good live band, “Sexy Back” that evening. versatile, not too loud (could talk without straining), nice little dance floor, dark corners to snuggle in, a real find!

Found a classic diner nearby (4th St Bowl) for breakfast. Everything very close, San Jose airport right next door, yet not noisy. Hot tub, pool. Yummy chocolate chip cookies at the front desk.

Overall, a great night on the town.

Tomato-Zucchini Gratin

This month’s focus at Spencer’s for Steaks and Chops, located inside the DoubleTree by Hilton San Jose, is Tomatoes! This fresh and delicious vegetable can be used in many dishes and can make any meal leave you feeling healthy and full.
For a light entree on a summer night, this dish is just the ticket. Salting and draining the zucchini and tomatoes before baking prevents them from releasing excess moisture as they bake, so the gratin stays firm, not soggy.

Use a paella pan or cast iron pan.

Sweet Vadalia onion ring slices on a nice drizzle of olive oil
Sliced zucchini
Handful of Romano cheese spread all over
Toasted Italian bread crumbs spread about
Small cherry tomatoes placed all around
Leek (optional)
Drizzle with olive oil
More cheese
More breadcrumbs
Repeat!
Garnish with fresh snipped basil
Place in a hot oven at 425 till tender and crispy and the tomatoes pop and get caramelized, you could even place it under the broiler at the end to crisp up the top more.

Tahiti Fete 20th Anniversary

Tahiti Fete is a cultural event featuring food, crafts, and Tahitian dance. This year it will be celebrating it’s 20th anniversary with competition and performances in Tahitian dance. There will also be workshops in Tahitian dance and Tahitian drumming at the DoubleTree by Hilton San Jose July 7 and 8.

Summer Movie Nights-Grease

Summer Movie Night tomorrow night at DoubleTree by Hilton San Jose! We’ll be playing “Grease” out by the pool starting at 8pm. Wear your swim suit so you can swim while you watch! See you all there!

Grease is a 1978 American musical film directed by Randal Kleiser and based on Warren Casey’s and Jim Jacobs’s 1971 musical of the same name about two lovers in a 1950s high school. The film stars John Travolta, Olivia Newton-John, Stockard Channing, and Jeff Conaway. It was successful both critically and at the box office; its soundtrack album ended 1978 as the second-best selling album of the year in the United States, behind the soundtrack of Saturday Night Fever, another film starring Travolta.
